When life gives you egg whites, make angel food cake. When life gives you a whole lot of egg whites, top the angel food cake with meringue.
Yesterday, I planned to make vanilla custard but hadn’t really thought about what to do with all the remaining egg whites. I briefly contemplated making an egg white frittata, but I quickly came to my senses, and, thanks to Alton Brown, came up with the far better idea of making my first ever angel food cake. However, since I don’t own a tube pan, I scaled down the recipe to make these cute little mini angel food cupcakes instead.
At the farmers market, blood oranges, lemons, and other citrus are starting to give way to spring’s fruits and vegetables. This week, rows of beautiful ripe strawberries, with their deep, ruby-red color and sweet fragrance, caught my eye. It’s a perfect time to showcase them in this simple, refreshing sorbet.
Strawberries and cream. They make a great pair, don’t they? In their simplest forms, they are spectacular, but they’re even better when baked together, like in these muffins. As soon as I stumbled upon this recipe, I knew I had to make it. Fortunately for me, strawberries are available year-round in Southern California.
Summer’s starting to wind down, but there’s still plenty of sunshine and warm weather. Here’s a kid-friendly ice pop to beat the heat!
To take advantage of the fresh fruits of summer, make this triple-layer Ice Pop with Strawberry, Mango, and Kiwi. Try it yourself as is or substitute your own favorite fruit but be sure to pick seasonal fruit at their peak of flavor to minimize the amount of added sugar. Limited only by your imagination . . . kids & adults alike will be giddy with anticipation for our popsicles!
