sunday’s harvest

Yesterday’s beautiful harvest from my new vegetable garden:

4 radishes (3 oz.)

1 small bell pepper (3 oz.)

1 zucchini (8 oz.)

tomatoes (4.5 oz.)

I’ve had so much fun growing vegetables this past few weeks and it’s amazing how lush the garden is right now. I am especially proud of my four little radishes, which I grew from seed.  I’ll have a few more radishes and zucchini in a couple of weeks as well as another bell pepper and a couple of jalapeños.  The two green bean bushes are also doing well, full of flowers and little tiny beans.  I anticipate harvesting a few beans in about a week.  The tomatoes are still going strong and the new winter tomato, the Jetsetter, grows almost a foot a week and has started to produce flowers.  The beet seedlings, also from seed, are about 4 inches tall now.  I’ve been sowing a succession of beets, radishes, and carrots every week and I’m keeping my fingers crossed that I’ll have more vegetables than I know what to do with in the coming weeks.

So now that I’m starting to harvest these vegetables, what do I do with them?  I welcome your suggestions!
