At the farmers market, blood oranges, lemons, and other citrus are starting to give way to spring’s fruits and vegetables. This week, rows of beautiful ripe strawberries, with their deep, ruby-red color and sweet fragrance, caught my eye. It’s a perfect time to showcase them in this simple, refreshing sorbet.
It is fortuitous that both strawberries and rhubarb are in season at the same time because their flavor combination works so well together. In this sorbet, sweet strawberries and tart rhubarb come together to make a light, refreshing, and visually appealing dessert or snack. Since it is made just with fruit, water, and sweetener, it is dairy-free, vegan, and gluten-free.
