For many Americans, going to the state or county fair is as much a summer tradition as baseball and fireworks on the Fourth of July. Despite the searing heat and sweaty crowds, we flock to the fair to enjoy the carnival games, rides, attractions, and, of course, the food. For me, the food is only one reason to go. Shocking, right? I can skip the games (I’m way too old for stuffed animals), the rides (I never understood the appeal of spinning really fast while suspended in mid-air), and the animals (too smelly, too hot, and ewww, too smelly). Let me tell you what I love about summer.
I love the sunny days that seem to last forever. I love going to the beach and the feeling of sand between my toes and the warmth of the sun against my skin. I love the coconut scent of my sunscreen. I love wearing fun, flirty dresses and flip flops and big straw hats.
Most Chinese restaurants often have “salt and pepper” items on the menu. Pork chops, shrimp, cubes of tofu, chicken wings, or squid are usually battered and deep-fried and served with a mound of chilli peppers and green onions. I made my version with squid, using both the body and the tentacles (my favorite part!). I didn’t want a thick batter so I found this recipe which coated the squid with a dry mixture of cornstarch and flour. Since I don’t like super spicy foods, I used the milder jalapeño peppers instead of Serrano or Thai chillies. I’m not sure how authentically Chinese this dish is, but as the fragrant aroma of the garlic, jalapeños, and green onions filled my kitchen, I knew this dish was going to be good. Continue reading
Having a vegetable garden has been such a joy to me! I know I’ve said it a few times before, but it’s worth repeating. The weekly harvest of tomatoes, zucchinis, peppers, string beans, and radishes has really inspired me to cook in a way I’ve never done before. Take the zucchini, for example. It is actually one of the few vegetables I don’t dislike, but I usually only ate it breaded and fried, with gobs of ranch dressing. The very fact that, in the last week, I’ve made zucchini muffins, zucchini chips (ok, this is not a surprise to anyone who knows my penchant for fried stuff dipped in fat), and now, zucchini fritters, is a testament to the power of home grown vegetables and organic gardening.

Last weekend, Chris went camping and I was home alone. I was too lazy to go to the grocery store, so I decided that I would make do all weekend with whatever food was already in the house. So for dinner that Friday, I had bacon, eggs and rice. I love breakfast for dinner. I sat in front of the television all night, watching the two Sex and the City movies. FUN!!! Not so fun was what happened on Saturday morning. I turned on my computer and after a couple of seconds, the flashing folder with a question mark appeared. Hhhhmm! I’m home alone and no internet. Bummer!!! I’m still too lazy to go to the store so I’m determined to eat whatever is in the fridge or pantry. I moped around for a bit and then went outside to check on my garden. Lo and behold…overnight, the little zucchini plants have produced a whole bunch of blossoms.
