At the Fair: Mexican Grilled Corn

While grilled corn is delicious with just some butter and sea salt, try this Mexican version, called elote, grilled corn that is smothered in crema Mexicana or mayonnaise, cotija cheese, chili powder seasoning, and freshly-squeezed lime.  This is a popular snack sold by street vendors in Mexico.  Some ingredients are Mexican staples but are widely available in grocery stores and Hispanic markets here in the US. 

Fresh, sweet corn on the cob has always been one of my favorite summertime treats.  Then, a few years ago, I discovered elote at the Orange County Fair.  Now, I can’t wait for the fair and when I go, I head straight to the same vendor for perfect char-grilled corn on the cob, husk still attached.

  2. You’re about the third person I’ve seen blog about elote this week. This might be a sign from the corn gods that I need to try this–though I’m always reluctant to stray from just plain old grilled corn with butter…

    • It’s corn season and everyone’s got the same thing on their brain. Try it! Just spread a little mayo on a section of corn, sprinkle some chili powder and cotija or parmesan cheese, and squeeze some lime. Easy and good!
