healthy and refreshing strawberry, mango, and kiwi ice pops

Summer’s starting to wind down, but there’s still plenty of sunshine and warm weather.  Here’s a kid-friendly ice pop to beat the heat!

To take advantage of the fresh fruits of summer, make this triple-layer Ice Pop with Strawberry, Mango, and Kiwi. Try it yourself as is or substitute your own favorite fruit but be sure to pick seasonal fruit at their peak of flavor to minimize the amount of added sugar. 2. What a splendid portrait of summer! The vibrant colors and flavors of the strawberry, mango and kiwi are a scrumptious frosty treat!

    • Thanks! I love making ice pops at home with my favorite fresh fruits. It’s a simple and easy way to make a refreshing summer treat that is beautiful, too.

  3. Love these, although I might be tempted to go for straight mango because I’m so addicted to frozen mango anything. Heading over to A Lucky Life now. 😉

    • OMG “the Jeans Company” !!!!!!!!!!! I remember when you said that might be something you’d start doing. Well-chosen, or as my old pair of Lucky Jeans said in the fly, lucky you!

      • Funny you should ask — I’ve been thinking a lot lately about ways to incorporate mango into desserts. I do buy fresh mango just to eat (especially when I can find Alphonso mangos) and I really like mango in ceviche, especially with scallops, since the mango complements the scallops’ natural sweetness. I want to try to make some kind of Napoleon involving mango and possibly pistachio pastry cream. Mango sorbet and ice cream are lovely obviously. I’ve been wondering whether I can incorporate mango into a pannacotta … don’t see why not…? For the past couple of months I’ve been so swamped with work I haven’t had the time I normally do to play with recipe ideas, which has been frustrating. Soon I hope.
