Try it yourself as is or substitute your own favorite fruit but be sure to pick seasonal fruit at their peak of flavor to minimize the amount of added sugar. Funny you should ask — I’ve been thinking a lot lately about ways to incorporate mango into desserts. I do buy fresh mango just to eat (especially when I can find Alphonso mangos) and I really like mango in ceviche, especially with scallops, since the mango complements the scallops’ natural sweetness. I want to try to make some kind of Napoleon involving mango and possibly pistachio pastry cream. Mango sorbet and ice cream are lovely obviously. I’ve been wondering whether I can incorporate mango into a pannacotta … don’t see why not…? For the past couple of months I’ve been so swamped with work I haven’t had the time I normally do to play with recipe ideas, which has been frustrating. Soon I hope.
